Hey Brad, you don't have to worry too much about trichinosis. It's extremely rare in commercially produced pork in the United States. There are generally only a couple of cases annually and they are almost always the result of someone eating undercooked bear or other game.

My wife used to write for a company that specializes in food and farm safety products and as a result of that job learned a lot about foodbourne pathogens. She is extremely cautious about proper food handling, safe temperatures, etc., but she has virtually no worry about trichinosis. That's not to say there aren't other pathogens in pork, just that trich usually isn't one of them. It's actually pretty safe to eat pork that you might consider medium as opposed to the usual well-done. Of course the USDA and CDC recommend cooking pork to a higher temp because there is still a technical risk. Also, people raising pigs at home might have animals that are more likely to have trichinosis.

Yup. The other pathogens that you might find in commercially raised pork are the same sorts of things you would find in any meat that goes through the slaughterhouse/packing process. Those microbes are always on the outside of meat, not in the muscle fibers (except for salmonella in birds). That's why you can safely eat extremely rare beef, searing the outside is enough to kill things like e coli. If you were to trim away the outer parts of pork, there is no reason to think it wouldn't be safe to eat raw.

I can almost accept not trying ketchup until you're 25, but throwing away Mac and cheese that you've already eaten and really enjoyed because you found out it has sour cream in it is some crazy person shit, and I fear for his coworkers.

Let them worry about that, I feel like Dan is a rabbit hole we've only just began exploring. His oddities are going to keep delivering.

Freaked me out in my teens. I can accept its in things but i kinda dont wanna know about it if it is.

Being somewhat of a picky eater myself, its not fun. SO i know where Dan's coming from. Id love to be able to like how everything tastes, but wanting to take the safe route is a real, valid choice alot of the time.

I like that Dan owns up to his food foolishness and seems willing to try most new things. I want Jeff's stubborn palette to have to taste stuff alongside Dan.
