Alfred's questline
The regular variant I stayed at mid-range and abused my Cane reach. Easy kill. The second variant was harder and I changed strategy. I'll repeat what worked for me.The first hit can be many different things with many different timings. Guessing wrong will get you punished hard. However, after facing the boss many times you can easily figure out the follow-up attack. The timing on those is VERY predictable.
My advice: Parry the second strike of a combo.
I'm not using the cannon, I don't want to waste a lot of levels on strength when I'll be using the Chikage, but Evelyn + Bone Ash gives you insane damage, & my Evelyn is only +4 right now, it has S scaling with Bloodtinge at +10.
It's still worth it though even without Bone Ash, one shot nearly does as much damage as the one handed Chikage.
I'll be experimenting more once I get my Bloodtinge to level 40-45 & upgrade my Evelyn to +9.

One of the easiest bosses in the game, just stay on its left side in the middle portion of its body.

In my case, it wasn't even the first time I fought her. I mean, I beat her in my first game and also in NG+ without any help so I thought "Yeaaaah I know that boss now, gonna summon some dudes for fun, it will be okay".
Welp, this is what happens when you're too confident and not focused, haha.

I can get Father Gascionge down to about 1/4 health and then his attacks in beast mode don't let me do anything. He blasts me pretty hard as I cannot successful dodge enough to even turn to attack him. Endless loop of smash, roll (but not far enough away), smash, roll. It's kinda funny actually...

eh? SOY isn't that difficult. I wandered into it by accident with half my vials, took it (them?) down with a handful of fire papers, though it was tense.
what do you get from the PD boss that helps with it?

In the central plaza, where the two giants are, there is on sitting in front of a patch which leads to a door where you need a password. Since you beat Amelia, you know the password. Go there.

This is good advice, trying to parry his first attack is futile, he is too fast. The best one to parry is the 2nd one after his big wind up attack.
I have but only in later parts. The problem with the early parts is that you can't get the item you need to be summoned until you have atleast 10 insight and even then it is at a shop that you can miss.

Nightmare Mensis. Enemies that take off 25% health with each swing, takes me like 6-7 hits to kill them, and I'm getting attacked by Frenzy from a far...and oh Giant Spiders that attack me in groups of 8+ ...man fuck this place.

It is the final area, only 2, 3, or 4 bosses remaining depending on the ending you end up with. Assuming you've beaten all the optional areas.
If you're having trouble with frenzy, I suggest you use good frenzy resistance armor & a frenzy resistance rune, & if you have too much insight, spend it & get it below 15.
No new areas unlock from there, Unseen village is basically where you're "supposed to go" at that point.
For Frenzy: Certain armor has better frenzy resist, so check what you have. There is also a +200 Frenzy resist rune, and if you have Sedatives they remove Frenzy.

Question regarding Chalice Dungeons:
I haven't tried any yet because I've just been doing the main content, and don't want to waste items and such in them. Can/should I just wait until New Game+ to start them?

OMG, Hemwick Charnel Lane has incredible art direction and atmosphere. Screaming Witches, foggy air, smoke billowing out of old houses. Barns and barn doors creaking. Damn. Love this section. FROM's artist are something else.

The Chalice Dungeons have their own difficultty levels and don't scale with NG+. If you started in NG+, you'd be super OP for the first couple of dungeons.
It was easy once I figured out what I had to do. Took out the other enemies so that I didn't have to worry about them attacking me. Axe spin does wonders though in that fight.
It is recommended that you have all the areas unlocked when you attempt the Chalice Dungeons, you're gonna need it to farm some stuff for the Chalice Dungeon, otherwise you're gonna have to progress very far in NG+ to unlock certain dungeons.

It is the easiest boss in the game. Viscerals are the way to go in that fight.

If you have insight from before,yes.
You have to gain one insight before you can level up in NG+.
