I think the the former is more likely (in seven months) - but people sometimes say things weirdly, so I wouldn't put too much stock in this.

She's saying it in a very odd way if that's true. But it doesn't seem like something to rely on either way. If I'd been working flat out on that I might have forgotten what month I was in.

I think you're right. They change the shot right after she says "...7months", and you never see her begin the next part of the statement.

Seems like it's just badly edited, for some reason.

I'm not native English, so you might be correct. I would have said something like "past 7 months" or made a slight pause after "7 months" to indicate a new sentence follows next.
