What modes lol? Your getting Vs.Mode (Online or with bots) and maybe a training mode. This ain't an Ed Boon production dawg.
- Devs have shown interest in some kind of King of the Hill mode.
- Non-story can still have modes: Arcade, Survival, Special conditions, Team Battle, etc.
- The fact they have a "point earning" system normally hints to their being something to do to earn those points. And those kind lf "3 hit combo: +200 points!" notices aren't generally for online / multiplayer play.
DOA makes elaborate modes out of viewing the characters in various poses in any stage you choose, with outfit, hairstyle, sweat and dirt level options as a choice. Or it's dynamic survival mode, where you can pick up enemy drop items to restore health as you fight on.
Chaos Code on PSN offers the ability to view stages individually, and has an exceptional gallery of in-game assets to view. Similar things happened in the KoF MI series.
Soul Calibur series generally put a lot of lore and notes behind their galleries. SCV had a mode that allowed you to fight ghost data of players.
There's a lot more than just Boon-style stuff out there, and even if it's just 2 or 3 modes, we don't know how fleshed-out each will be. Even the newest, smallest roster fighters generally try to do something unique and notable.
