First two that came to mind:

Ready, Steady, Go from the original FMA is still one of my favorite anime openings even though I like FMA:B more.

Cowboy Bebop's Tank is a great classic.

One more time, One more chance is the best song ever played during an anime. Sadly the one in Garden of Words wasn't as memorable.
