But why can't I just view that on my TV screen or VR headset, with the exact same 3D model? Just seems like added interference for no reason besides novelty. Why add the real life background in, the extra input lag, the less precise gesture controls etc?

Because it's augmeneted reality and the future. Why not make any wall in your house a 80 inch TV? Why not have a fitness game where you are actually in the game and see trainer right beside you doing it?
