X-men Legends!!! Although the story requires the number of players to change frequently. But usually extra players will only have to wait a few minutes. Players can join and leave the game seamlessly. It's pretty cool.

Halo
D&D Heroes <--- ROX
Hunter <--- All hunter titles were pretty fun for me, but only because of 4 player function.
It probably sux for one player.
Baldurs Gate: Dark Alliance I & II <--- Excellent games
Gauntlet Legends <--game is pretty lame but can be fun in party environment
State of Emergency<-- SUX
Blackstone: Magic and Steel <--- Rip off of Gauntlet Legends = LAME
There was also some Todd Mcfarlane game that was HORRIBLE. I can't remember the name.
I'm really into these 4player Diablo style games b/c my wife and a couple "non-gamer" friends play them with me. If you hear of anymore, speak up!
