I do a similar thing with T-Mobile (Jump on Demand) except I get the iPhone 6S+ for $19 per month instead of the $40 per month Apple charges. I don't have a warranty, but I can swap to an android or ios phone at my leisure up to 3 times per year.

The iPhone upgrade program is nearly identical to T-Mobile Jump. Finance the full price of the phone and it looks like an extra $5 on top of that (t-mobile has an extra $10). You get to upgrade once half the phone is paid off(12 payments), and you get a protection plan with it (t-mobile offers lost and stolen protection tho).
t-mobile's JOD is a lease tho, plus you don't get warranty and that $19 a month plan was a special promo that's not going on anymore. The 6S+ will be $31 a month unless t-mobile announces a similar promo (though for you it'll still be that $19).
Yeah, no insurance is a risk. T-Mobile has said you can use any insurance you would like. Might get apple care for this upgrade as I already paid apple $100 to replace the screen on this 6+ once.
This Apple plan is a lease as well. You don't own the iPhone unless you make all 24 payments just as I don't own a phone on JoD unless I make all 24 payments.
It is a difficult concept for many to accept since car leases are scammy. Lease itself generally has a negative connotation. When the numbers are actually crunched there is only a small difference between a phone lease and phone ownership. This small premium is made up by the convenience of never having to sell phones on craigslist and having the freedom to upgrade on a whim without fronting any cash.
Yeah, I've been thinking of doing JOD too, but only if they have a similar promo going on (which looks likely seeing John Legere hint at it on twitter). Didn't bother with the earlier promo since I don't have all that good credit and didn't want to put down a huge down payment on a phone I'll only keep for a few months.
Also, this is more financing then leasing, and with your deal you'll have to pay a buyback fee to keep it (around $200+).
I'm not saying it's a bad deal, with them giving you a $12 credit a month it's pretty good.

that being said, I'm not sure what he based his feeling off of. We still don't know the actual numbers and likely won't until somebody does a teardown or a leak.

I'm wondering if he's judging by the lagginess and crashes. If the 6s performs as poorly as the 6 i could see how he might be able to make that judgment. Having owned a 6 plus since launch I think I'd be able to tell because the 6 plus is one of the worst performing phones I've ever owned.
As a heavy user I have to hard reset my phone at least twice a day. I'm guessing he put the 6s through its paces somehow with his time with it.

Play games, watch videos but not through the app, play podcasts on music behind games or different apps at the same time, Sling, 3rd party keyboard and add ons to my browser to name a few, maps running in the back if im in the car.
Genius Bar has this thing to run a diagnostic on your phone and i got a big yellow indicator for my ram.
But even something as simple as clicking into a video from gaf or my feedly feed will crash the phone at about a 90 percent likelihood if i haven't rebooted for half a day.

I do pretty much the same things on a jailbroken 6+. Never experienced "crashes" however, I do have to reload tabs in Safari which doesn't matter since it takes a fraction of a second.
I did have a large GIF once tell me the device didn't have the memory to display it. That's about it.
If you are having actual crashes where apps are completely closing or freezing randomly then I think you have a defective unit.
If no 2GB not gonna bother upgrading. I use browsing on my phone more than anything else. Anything more than 3 tabs = crash/reload hell.
