BBQ season!

Yes, it's that time of year again. I got the grill out of storage last night and I've got a feezer full of beef to burn through. Everything I consume from this day until October must either be lathered in BBQ sauce, or covered in the flavorfull charred remains last night's meal. So shall it be. Last night it was New York strip and baked potatos, tonight I think it'll be some BBQ chicken.

Anybody got any good recipes?

my father-in-law manages a local BBQ pit opened by probably the city's best bbq cook. he owned/ran another high end restaurant outside the city a little bit but recently closed it down to concetrate more on the BBQ pit chain he is trying to start (second joint opens this month).

it is similar to famous dave's I guess (never been there though). The meat is all dry rubbed and slow roasted in a huge smoker with these cedar pellets or whatever. they have beef brisket, pork shoulder, pork short ribs, klements sausage, and chicken (half or quarter). at the table they then have four sauces you can choose from, all custom made. Texas BBQ which is your typical Texas style sauce.. a little sweet, very tangy. kind of bites your tongue a little but not really spicey at all. a spicey mustard which is almost the same amount of bite, maybe a little spicier.. and very bitter.. not at all a sweet mustard. Then they have one based off a local breweries root beer.. sprecher root beer. this is VERY sweet. so much so that I don't like it, though I am in the minority.. it is their most popular sauce by far. my favorite is the Quazy Hot sauce which is the exact opposite of the Texas BBQ. VERY spicey with just a hint of sweetness. absolutely delicious.

you get a meal which includes two sides.. cheesy corn, beans, slaw, blanched fries, umm.. I think that's it. corn bread with honey butter.. the meat comes served on a slice of white bread. the pork shoulder and brisket you can order either sliced or pulled.

unfreaking real. best BBQ I have ever had by a mile. Q BBQ if any of you are ever in the Milwaukee area.

I'm not a big fan of Famous Daves. John Hardy's BBQ forever! Too bad it's only a local chain.

They're opening a Famous Dave's right up the block from me... been watching it get built every day as I drive into work... Been curious about it; I've never had real authentic Southern BBQ (not too common in LI) but am a big fan of the food.

We just got a new barbecue and the weather's finally picking up around here, so that'll be awesome. Today we're eating pork chops, steaks on Sunday, probably some grilled chicken or burgers on Thursday...

from what I've heard, Famous Dave's is great if you don't know what you're missing.. but BBQ is an art, and much of the art is lost when you institutionalize it... this is how most of the local joints end up surpassing it usually..

a few friends of mine were the ones who let me in on this. they used to love famous dave's, but then when this place opened they basically stopped going there and went to Q's. they said FD didn't compare at all..

so if all you have is famous dave's, go to it.. southern BBQ can't be beat. but if you have a local BBQ pit, try that out also. many feel you will probably like the small joint better.

yuck... after eating dry rubbed (so freaking good you could eat it without sauce), I will never again eat BBQ that is sauced on the grill...

Yeah, dry rubbed ribs are great. But I like them both, as long as the BBQ sauce is good.

I agree wholeheartedly. My favorite BBQ place, Gates Barbecue in Kansas City, has a sign in their kitchen that I've always loved. It says "Barbequeing is an art. Be an artist or be gone!"
