Triple Triad is definitely my favorite as well. The snowboard game at the gold saucer in FFVII is a close second though. I just need to shave a tenth of a second off my beginner time to (hopefully) get the third Freak rating, but it's incredibly hard.
 
Those are both good, and Triple Triad was much better than Tetramaster, but I quit playing Triple Triad due to the rule change that selected my cards randomly. I loved it up to that point.

The Chocobo Breeding/Racing minigame in FF7 may not be one of the best, but it was quite captivating in its time and it involves many different game elements. The only annoying thing about it was knowing that you needed Carob nuts for the best chocobo.

I also loved the motorcycle game in FF7.

Xenosaga's poker was fun, mostly because the odds were more in your favor than real poker. I guess Shion likes to cheat at cards.

Blitzball was good in FFX, but I hated the management-based aspect in FFX-2.

The Quizzes in the older Tales games were fun, if frustrating.

Fishing in Zelda OoT. The minigames in Goemon1 for Snes. (mystical ninja) That game was like a giant minigame.

And that's when you find out about the fisherman at the docks in Balamb

Saved my ass a couple of times when I accidentially spread Random rules

needs to show more effort.
I liked the magic like game in xeno. I tend to like stratedgy and forethinking involved in building decks moreso than actually playing the game.

alas, eventually it became too easy.

A little late, but if you read Triple Triad faqs, it says "don't spread random!!!" like mad. Like belgurdo said, you can pay to have the rule changed. There's no way you can beat the real tough card people (CC people, Edea isn't easy) with random on.

Xenocards is easily my favorite, such a deep mini-game. Tetra Master comes second.

why has nobody said deathtank. 8 player mayhem, and the only minigame that was more fun than the actual game IMO.

Hey, nice thread. Off the top of my head:

Fishing in OoT.

The little wooden-arcade game with
Geno
In Mario & Luigi.

Any game with a colosseum you can battle in (such as Tales of Symphonia)... if that can be considered a mini-game, anyway.

Lucky-Hit in Shenmue 2. (Okay it wasn't that great but Ryo attempting to advertise it to passer-bys was hilarious). Don't forget all the real retro games you could open up in Shenmue, too.

Gambling in the first Pokémon games at the casino, way back in the day. (I remember doing quite a bit of that, for some reason).

All the minigames you could unlock in Jet Force Gemini! (Been meaning to play that game again, actually)

The target practice games in the various Zeldas. Especially fond of the horseback archery one in OoT.

The battleship game in Wind Waker. (Yeah Battleship is kind of boring too, but the clerk in that shop makes it the best mini-game ever. SPLISH)

The gameboy game you get in Super Mario RPG where you have to shoot those monsters, I loved that game, I played it so much I got a sore on my thumb.
 
-Fishing in OoT.
-Pyoro in Wario Ware (if that counts)
-Mario & Luigi minigames (a number of them)
-Air Hockey-like table in Beyond Good and Evil.

Hates quality gaming
Sakura Taisen series:

Kobu Knuckle, Trump Taisen, and a few precise minigames like Sakura or Iris's ST2 games. I had to have spent an extra 40 hours on ST2 from Trump Taisen alone.
