Does anyone know what the technique is called to produce something that is all black and white except where only the red color is shown?

Something like this...
Red.jpg

Oh and any ideas where on the web I can get them from?

Cheers!

Photoshop.

I've got a video camera that can do it (Sony HVR-Z1U).

I'm not sure if you mean doing this to video footage or to still frames, but I've done this a million times with photoshop - it's a breeze.

Open your image, copy the whole thing and paste it to a new document. Turn the new image to grayscale and copy and paste the whole thing again.

Go back to your original colour photo and paste the grayscale version over top of the original in a new layer. Erase any portions you want to be colour.

Select by Color
Invert Selection
Desaturate

That'll only work for images where the colour borders are very clearly defined. You're much better off with:
Image > Adjustments > Hue/Saturation...
Just reduce the saturation on everything bar the Reds (and the Master) to 0, then move the boundaries on the Yellows and the Magentas (to encroach in on yellowey reds and magentaey reds) until you've only got the range of reds you want to keep. (You can also increase the saturation on the Reds if you want them to stand out a bit more, although this obviously depends on the image you're working with and what you're trying to achieve)

Just a note, though, the image in the first post was probably a simple Polygon-Lasso, Invert and Desaturate job, as the natural skin tones would have contained quite a bit of red in the first place.

Download Picasa. It does it with one click, and you can select the area that you want to maintain it's color.
