Good lord, what kind of job are you interviewing for? I doubt you're going to get a good night's sleep as well as be able to prepare for an interview staying at a youth hostel.
Note that I don't live in London, but my experience at hostels is that they're not conducive to that kind of stay.
The one time i stayed in London for two weeks, me and my gf stayed at "The Generator".You should find it on google. It was quite cheap, but apart from that I don't know anything about accommodations in London.
How long would your stay be? You're actually much better off renting a flat if you'd be in town for more than a few days...if not...give Ghost's advice a shot and God be with you. It's London, after all.
Can you fly to gatwick instead? Its much easier to get to the station at gatwick, as its in the terminal, to get to Luton airport parkway (station) you have to take a shuttle bus, i guess its not a big deal as long as you have the time.
Either way a return is probably gonna cost you about £20 (might go up to £30 ish, depends where abouts in london you are going), depending on how far apart your flights are...a day return is only £12 to luton, single fairs are probably about the same.
Cheap and fresh rooms. It's a big company with hotels all over the UK. But I don't know if it's really that cheap if you're traveling alone. Since I use to travel with my family a family room at a Travel Inn is really a bargain.
