Do the RAM sticks need to be installed in pairs? I noticed the pattern on the Apple web site and I seem to remember something to that effect. This may be on the older model only or something...Thanks in advance to you Apple wizards.

(I interpreted this as - if I'm buying more RAM, (DDR SDRAM 3200) I'll need to buy two sticks of whatever it is. So for another 512 I need two 256.)

Yeah, they do. The new ones do as well (I just bought a Dual 2.0GHz).

Blast~ What brand do you reccomend? I've heard of some compatibility issues with different brands.
