I never used Meteo. But I had my Locke attack 8 times with the Illumina, which was a pretty deadly combo.
If a Final Fantasy VI remake were to occur, more than anything else I'd want a fully orchestrated soundtrack. If Square feels like they need to add a vocal theme, then use "Time Wanderer" from FF: Pray. No JPop!
I'd also prefer no FMV, but this may be too much to ask for, even in the next gen. Show me Doma being poisoned, Figaro descending into the sand, Terra transforming and going nutso, the World of Ruin...all in real-time.
I'm sort of divided over this, but I'd want a new translations. Ted Woolsey's translation works fine for the sprites - the different animations add so much. But with fully 3D characters, etc., a lot of that will be lost. Imperial soldiers saying that Terra can wipe out an entire army in under 3 minutes (OMG!) seems a little silly this day. This is the one aspect that I trust Square in.
What I'm not sure over is voices. Since this game has so much Romanticisim / Victorian visuals in it, put actors from Britain in. Worked brilliantly for DQVIII.
Have characters look pretty much the same as they do in the FMVs from Anthology. I thought those were extremely close to Amano's drawings, while not going over the top.
