Getting the correct audio output on PS4 and XB1?

I'm having some problems with getting the correct audio output on the two consoles and I need some smart gaffer help.

I'm only equipped with a set of speakers, so I'm looking for a 2.0 stereo output from each console. And it needs to be put out via HDMI as everything goes to the TV and a single toslink cable goes out if it into my audio monitors. Tv is set to pass through audio.

Right now I have what I believe is the correct settings but apps such as Netflix default to 5.1 output instead of stereo when watching content, leading me to believe that the console and audio output is not set up correct. Which has me worried that I'm missing game audio with my current setup.

PS4 and Xbox One settings are :
HDMI out
Linear PCM

What am I doing wrong? Or is Netflix and other streaming apps just weird and forcing 5.1 out of nowhere?
