I remember DAoC having some decent fan videos when most of the time MMORPG players set their video to some Rob Zombie or other HORRIBLE death metal that only the kid making the video would listen to.

So far, I've only found this one good EQII one:
Everfrost to the tune of Led Zeppelin's "Immigrant Song"

Have there been any good fan-done WoW videos yet that aren't just gank fest vids set to death metal?

Yes, but it seems like 98% of them are just videos of gank fests set to death metal.

DAoC used to get some really really nice videos done.
