Honestly OP there aren't that many. Oban star racers isn't an anime but the racing is pretty nice and its sci fi.

I bought a projector recently (and good speakers) and Redline was the first thing I watched on a 140 inch screen and the volume blasting.

Felt like my eyes and ears would melt from the awesome.
