maybe it has been surpassed in total value by some other heists, but the insane level of detail and methods that these Italian thieves implemented is insane. Just reading the wiki article of the step by step process has me bewildered
I really don't think their is another heist that rivals this in complexity. At least one I can think of

Take a year and a half to plan - spend hours just moving from one place to another. Guy throws damning evidence in a bush instead of burning it - eh, it would take far too long to pick it all up.
