Bowser's kids are Mario universe, Kirby isn't. Miis got added to everything with Wio. Link was just recently added. Kirby ain't shit to Nintendo in comparison to Link.

Actually now that you mention it he is perfect for a game like Mario Kart.

Check it out- Kirby could be a weapon similar to banana but instead of spinning out the " kirby bubble" gets sucked into your kart intake and encapsulates your Kart in a bubble and you float up into the air and pop.

Mario Kart has a F-Zero track, so there should be one made for Dream Land at the very least. Kirby already has a racing game to get inspiration from.

Also a more realistic answer is it's likely due to the development teams for the characters. Mario franchise, link, animal crossing and splatoon are made in-house by Nintendo whereas Kirby is actually a second party franchise made by HAL/Hudson soft.

it's the same reason why you don't see pikachu or any other Pokémon playable in these games

To answer the question a little more seriously though.

Having all the Nintnendo characters is what makes Smash Bros special. Doing this with Mario Kart and fans are gonna ask it for other Nintendo games and it'll keep going. I questioned them even having Link in it because I felt eventually we were going to get threads like this (and spelt like this too)
