On the dancing, look up the short "Jango's Dance Carnival". The Straw Hats are no stranger to dancing.

Yeah as a statue. He probably should have been shown anyway as his fight-style is already extremely close to dancing. How many times does he walk on his hands and spin. Watch him and guys like Franky and Brook who also make the most sense not be playable characters and only the three shown for popularity and fan-service.

I guess they didn't want Franky as the main character because his constant "Ow" and "Super!" would have distracted from the actual music. Not that anybody was really paying attention to it.
