It should be like GTAV but parroting The Good, The Bad and The Ugly. Make it one white guy, one black guy, and a mexican or a native american. All of three should be bad guys in their own way. Like, you don't even have to change much, you can keep the real time character switching if you want.

Red Dead Redemption took place about 50 years after the Emancipation Proclamation.

It's not like Rockstar hasn't jumped around to different times and ages before. This isn't even a hurdle.

RDR road off of the coattails of GTA IV. Given the powerhouse that GTA V was, I expect their to be some character switching mechanisms in the new RDR.

I'll play anything Rockstar puts out and I trust them to do an amazing story and game. My preference would be multiple characters like GTA 5 though, really loved that whole switching aspect and multiple view points on the same world.

Having watched Hell on Wheels for all 5 seasons (finale this weekend!), life as anything but a white guy would probably be pretty damn brutal to play as, not sure how much I'd enjoy playing it vs watching something on screen.

Theyd have to go pretty far back compared to RDR2. Definitely would rather have a Native American though, a bit less represented and might make things a bit more interesting than Django Unchained The Game. Shooting whitey for forcing your tribe off their land would be awesome, could star Cochise if they go back a bit, the Apache Wars would be a hell of a setting.
