My assumption was that the way flights are scheduled, they would need that plane to be able to make a fly in whatever city they were headed to. So basically even if noone was on the plane, they would need it for another flight and they would go.

You are correct. The plane needs to be somewhere at a certain time, regardless if it has passengers. There's a term for it that I don't remember.
