Damn looks like I missed some cake/ cupcake/ baking sweet talk this morning!

I took up cake-making 2 years ago so that my wife and I could save some money on our daughter's 1st birthday party cake, and I've been making cakes or cupcakes for most of the family parties since then. I made my sister-in-law's wedding cake in October, which was nerve-wracking!

I will give you all my favourite chocolate chip cookie recipe for now :)

Chewy chewy and delicious.

2 sticks of unsalted butter
2 1/4 cups of bread flour
1 teaspoon salt
1 teaspoon baking soda
1/4 cup sugar
1 1/4 cups brown sugar
1 egg
1 egg yolk
2 tablespoons milk
1 1/2 teaspoons vanilla extract
2 cups semi sweet chocolate chips.

1. Sift together flour, salt and baking powder and set aside.
2. Melt the butter in a sauce pan over medium heat. Pour into a large mixing bowl and add both sugars. Using electric beater, cream butter and sugars together on medium speed until mixture looks like thin peanut butter (about 3-5 minutes).
3. Add egg, yolk, vanilla and milk and mix until well combined. Slowly incorporate the flour mixture in parts until well combined. Dough should look like peanut butter. Stir in chocolate chips.
4. Allow to chill for at least an hour in fridge (make sure to put plastic wrap over the bowl!).
5. Preheat oven to 350 F. Line a baking sheet with parchment/wax paper.
6. Scoop cookies (I use about a tablespoon) onto sheet and bake for 8-10 minutes or until golden brown, checking after 5 minutes. Rotate the pan when checking to give cookies even browning.
7. Allow to cool on pan for 5-10 minutes and then transfer to wire rack and set up the next batch!

Cookies will store in an airtight container for quite a few days, but they're so delicious you probably won't need to store them. :D

And with that, good night everyone!
Well, I guess I'm going to have to breal my eating healthy streak.

All of you "not that young" types. Let me break it down for you.

Me.

I'll be FUCKING 40 in 2 years. 40

Live with that realization!

That is two years from now Dave, that doesn't count. You are still safely in your 30s. In fact we both will be as soon as my birthday hits.

Pah! Whippersnapper.

(EDIT: you could be my son but probably luckily for both of us you are not)

You have given me great solace my good man. Thank you for that. I now know I am not alone in listening to all of these young people complain about getting older.

I'm invited to your party, right?
