Well, in Brawl you can actually change your buttons... while in Melee you can't -- people do it in Melee as a warm-up so some people have started calling them 'handwarmers' in Smash.

Also, sometimes when you're plugging in your controller your stick can be recognized as slightly tilted, doing a handwarmer ensures that if the controller is messed up like that they can reset the controller.
