You can either create 6 seperate Plane primatives, or you can do what you're suggesting and take the sides off of your box.

Right click your box and convert to Editable Poly. Selection options will appear on your right allowing you to select by vertex, edge, border, polygon or full element. Select Polygon and click a face... you can now go to Edit Geometry and detach from the box, naming the new object that results. What you end up with is only going to have one surface, so its only visible from this current angle... if you're after a different effect then after selecting the one sided invisible object, goto the Modify tab, select the drop down modifier list and choose Cap holes.

I'm sure there are other ways to do what you want, and I'm sure other people can help far more than I can, cos I don't really have too much experience with this thing...

Speaking of which.. Can someone help me with Inverse Kinematics and the whole bone thing? I just dont get it at all. Any tutorials with a guide for creating a simple moveable model might help in this regard..

The tutorial files that ship with Max cover IK and Bones. Open up the Tutorial file and search for Inverse Kinematics and Bones under the index.
