Yup that was the story at my store, Redondo Beach Target. And as an overnight employee I had to leave and come back to buy any.
To think on day one I bought every single one of the initial wave with no problems and now it's come to this. :/

That kinda makes sense. Wreck-it-Ralph was BB exclusive only for a little while ... Of course, that means, you know, they would actually need to have more stock to ship.
I'm actually not that far from there. At the Target in Signal Hill in Long Beach. Managed to get one of the last ones.
It's crazy how this has all turned out. It's only going to get worse from here I'm afraid.

Is Sheik retailer exclusive?
Went to my Target, they had 6 Rosalina's aparently but one guy bought them all out. Until they found an additional shipment and sold those 6 out throughout the first hour. There was a huge line for them and they guy I was talking to at Target said he was surprised and shocked at the demand and knows that all the other Target's in the area were selling out within the first hour.
So scalpers/amiibros are out there buying them all out. ): Shame.

My target split the ringing up in electronics between two cashiers. I walked up to the second register after someone who asked for Rosalina and Toon Link before me at the first. My cashier was faster to grab Rosalina and the last TL. To the Amiibro that I gave the Toon Link to, the rightful owner of it, you're welcome. I was surprised by everyone's reaction of awe. They're awesome toys/figures/accessories, but they're not worth making another person feel dejected, or ruining their day. What has the hunt come to?
So 2 hours later and 3 different stores Best Buy,Target, and Walmart. I was able to snag Rosalina and Luma and a Bowser. Some dickbag bought all the toon link and Best Buy didn't have shit. I just wwnt a Toon Link. Syracuse,NY Target still has some Rosalina and Bowsers left.
No just really rare.

Broke down and paid $23 on Ebay for US version of Sheik. Don't like paying extra but this one seems like if I don't do it now it will be too expensive later.
Snagged a Rosalina at Target earlier too. I think they only had 2 to 4 Sheiks and they were long gone when it was my turn in line.

Haha, those were probably my two friends then. We were trying to figure out what each of us needed and coordinated accordingly. The Crestwood store only had 12 Rosalina and if the people in front of me ran (which about 6-8 of them did a mad dash to the back) I figured I may have lost out.
I covered Shiek for them. They said something about someone in front of them who bought 2 Shieks I think and luckily nobody at the Crestwood store wanted anything else besides Rosalina.
Decided to check out Best Buy just for the heck of it. No Meta Knights. Asked an employee, he had no idea but said he'd check their computer. Came back and said it just says release date 12/31. Lol. I didn't really want a MK anyway, so I won't be checking again. Best Buy is awful though.

My amiibo story for today, thoroughly fleshed out, and needless bits added.
I usually go to bed at 3AM and wake up around 11PM. But I'm getting a job in the next week and need to fix my sleeping schedule really freaking fast. So last night I worked out a bit to wear myself down, and managed to get to sleep at about 1:30. Well, my form must have been poor or something, because I woke up at 6AM with sharp back pain and wasn't able to get comfortable for another thirty minutes. At that point I figure it wasn't even worth getting another hour of sleep, because then I'd have trouble getting up and ready to hit Target.
I dozed off a bit, got maybe twenty minutes more, but after that I got up and ready. It's about 7:50 when my Dad and I strike out towards the store. It's only a six minute drive.
We get there, and there's plenty of cars in the parking lot. Somewhat confused, as the store wasn't actually open going by the clock, we get out. Store IS open, a few minutes early.
We walk in, and it's just completely dead inside. But approach the Electronics section and boy did that change. There were "only" seven people there (not including us), but they were literally the only customers in the store. Everyone in the store at that moment was in the Electronics, wrapped around the small check-out they have there. Now this is where I'm hopeful; somebody either called in, or Management took it upon themselves to put a limit! Then my hope drops; they were allowing people to get BACK in line for another until their cart of amiibo ran out.
I see the last Rosalina get bought in front of me by a stereotypical... well, he didn't look interested in the figure itself, lets put it that way. But, they had Toon Link still, so I got one of him.
At this point we ended up walking the store, as my Dad spoke some choice words about the policies (glad nobody was around lol), and called up his brother/my uncle, who was at his Target on the other side of town where he lives.
"What's it looking like on your end?"
"Well, I got one."
We ask which, and he informs us he got a Rosalina. Apparently that Target had more Rosalina than Toon Link! So everything just happened to work out perfectly. Extremely appreciative of my Uncle (and Dad, of course!) for helping with the whole situation. ^^
Will have to take pictures of my humble collection -- in comparison to GAF -- later.
Side-note, our store only had two Sheik when we got there, but I'm guessing they probably had four like everyone else is seeing. She's either going the way of Diddy, or Little Mac. Too early to tell.

Had some interesting conversations this morning though, nobody knew about NeoGAF but most followed Reddit. Many were upset by the Club Nintendo shutdown so I asked how many coins each of them had: a little over 1,000 each. Makes me feel a lot better about my 4,030.

1. Irving, TX 8:02 - I get to electronics and there are 7 other people standing at the amiibo isle, no one at a register, and a target employee is leaving them. Turns out, they had to explain to the employee what they were there for, and the employee was entirely clueless so they had to show him. After ~ 10 minutes of him checking the back, he came back saying they had nothing. The first guy and his friend showed up at 5:45 .. for nothing. A girl in line said her husband called the neighboring Euless store on Friday, and they told him they'd have 32 Rosalinas.
2. Euless, TX 8:28 - The customer walking out of Target has a bag with an amiibo. I get to electronics, and I see boxes of amiibo behind the counter, and one customer paying for the Rosalina on the counter. Yes! ... oh. That was the last one. The employee volunteers to check the boxes again. Yep. They only have Bowser remaining. Guess I'm going home. I miss my exit, diverting me towards Hurst, TX.. I check google maps and there's a Target 2 miles away. 3rd time's the charm, I tell myself.
3. Hurst, TX 8:45 - No one in electronics... The amiibo section has 7 Bowser, and no other wave 3. An employee shows up at the counter, and she confirms that there's nothing else. She said they had 12, and that the line started forming at 2 in the morning. I told her about the poor guys at my store who waited for nothing.. She then let me know that North Richland Hills just up the road got 50 Rosalinas.
4. North Richland Hills 9:00 - A customer is buying amiibos at the electronics counter.. But it's just 2 bowsers.. not a good sign. Employee confirms that's all that is left. He said that they had gotten only 30 Rosalinas, but 50 total of wave 3.

I arrived at the store around 7:30ish and a few cars pulled in just a few minutes later but thankfully everyone was staying in their cars - which I appreciated considering we currently have a snowstorm raging here!
Around 7:45, another car pulled up but the guy immediately went and stood by the door so I reluctantly went to join him, as did everyone else in the parking lot. Luckily, they all turned out to be friendly amiibros and, since there were only 8 of us when the store opened, we were all able to buy 1-3 Rosalinas each!
There were still 2-3 Rosalinas left but they only got in 2 Sheiks which some of the guys ahead of me in line grabbed. Luckily mine just shipped from BB so I didn't mind.
