The Fruits Basket manga is an excellent manga, and while I haven’t watched the 2019 anime version (I’ve seen the early 2000’s version which was an incomplete adaptation and also the animation was weak), it is a full adaptation of the manga to my understanding so it should be solid.
Undead Murder Farce is great. The arcs do have diminishing returns, after the first episode serves as an introduction to the main trio, the first arc is excellent with tons of brilliant detective work to solve an intriguing “whodunnit” mystery. The second arc is really good, less of a mystery and more of a mind game between our leads and a certain clever thief but still engaging. The third arc is fine, there’s a bit of a detective work but it got too action focused for my liking, but by this point I liked the main trio enough to think it was worth finishing. The third arc also had the weakest directing/editing, but the arcs prior to that were solid in that regard, no surprise as this is the same director who did Kaguya-sama: Love is War.
No idea when or if a second season will be announced, the original novels are released at a slow pace and I think the first season covered most of them to my understanding.
Also, UMF takes use of public domain classic literature characters, so expect certain renowned detectives and supernatural creatures from classic literature to have a small role here and there.
