If I had to choose the spice I buy the most of it would have to be coriander seed, which I buy by the pound, or actually, 500g, in the Indian market. This is used in many of the cuisines I cook, and most of what I buy is the Indian variety - the oval, golden colored variety. The rest I use is the small, reddish, round variety, from Thailand or Sri Lanka - stronger flavored than the normal grayish, middle eastern variety.

Cumin would probably be my second favorite spice, and is also used in many cuisines. As for herbs, basil would be my favorite - sweet and Thai basils - what made me start growing it in the off season. However, the herb I use the most would have to be cilantro, since I use it in so many different types of dishes.

Crushed up basil flakes and lemongrass powder.

I have one of each. And also a third empty shaker where I do half and half mixed up. Only problem is basil is way lighter and flakier than lemongrass granules, so I got to shake it a bit to even it out.

I'm not a big garlic guy, but do have garlic powder too. I dont use it often. But I prefer it too chopped up garlic in a jar I bought one time. It was gross. I might try pureed garlic sauce I've seen to add to sauces or marinades though the powdered stuff seems fine. I'm thinking this pureed stuff is fresher and better than powdered but I dont know. Maybe end of the day its the same shit.

The garlic bits were hard. I dont want to be biting into garlic when I eat food.

Hmm...well, I use a mixture of turmeric, cumin and garam masala for my curries about two or three times a week. But I've also been using cinnamon every other day here in the past two or so months making oat breads. I used to use garlic powder for my meatballs, but my son makes those now. I don't know...not sure I can pick a favorite. And sumac I add to my tri-bean curry once every week. There's a lot of good stuff to choose from.

garlic can be subbed with real thing - so definitely Cayenne pepper or any sort of spicy pepper condiments.
I've been on low-sodium, low-fat, low-cholesterol diet - and the spices really helps me to add a lot of salt.

But I am a sucker for mixed spices - and my all time fav is Creole seasoning. (Emeril's Essence - homemade, of course)

Chilli powder or a ground chilli of various types, have been mostly using some italian "peproncino" as of late. I like it because it's decently hot but has a rather neutral flavor so you can basically put it on everything.
As much as I like stuff like Thai Cury paste it does have a very strong and distinct flavor and I don't want everything to taste like that, so I only use it when I want that specific flavor.

MSG is great too, I only recently discovered the bad reputation it has is mostly either fake or hyperbole and I've been using it often .

I don't know why, but I typically associate cinnamon with sweets, not anything savory,
 
I use a fuckton of spices. Mostly mixed. I buy 1kg bags from amazon. Hot madras is the one I use the most but I also get through a lot of tikka masala and tandoori masala. Others I use include garam masala, ginger, turmeric, msg, chili and chinese 5 spice.

Cinnamon goes in cinnamon buns so that is the obvious winner. All other choices are wrong and bad and if you pick one you should feel terrible about yourself and then go have a cinnamon bun to feel better.

Garlic, never bought powder though, although salt always goes with vinegar for me, i guess vinegar doesn't count.
 
Turmeric, Cumen, Saffron I have turmeric tied to my current diet. I put it in my meats or my rice, which is mostly basmati or brown., sometimes jasmin.

Last summer i had 2 months where i was into cooking and soy sauce, various form of garlic\onions.

I usually don't like strong spices very much.

Not so much herbs but I love putting Frank's Hot on lot of stuff. Chives are good on eggs and cheese. Parsley and Cilantro in home cooked stews etc. Different curry powders FTW as well. Oh and kumin seeds on grilled cheese sandwiches <3
