Wait, how does this work again? Do I have to "copy" the files over to my PSP? Or copy them from a folder on my PC to another folder?

I just tried copying a bunch of images to another folder on my PC and the creation date didn't change...

Just use the program Articfox linked to and have it modify the dates of your image files. Just choose the directory they're in, click a few boxes and bam, everything's in perfect order on the PSP.

I used to use this little program to make changes to the date modified of several files at a time.
