As a very casual fan of fighting game tournaments, could someone explain to me which consoles are used as the standard for each game and why? I'm curious how the communities came to decide on one instead of the other. It appears that PS3 is used for SSF4/MvC3?

PS3 is the Evo standard, and this tourney is for seeding points at Evo.
The reason PS3 is the Evo standard is because Sony donated a large number of PS3s to the tournament a few years ago.

I believe it's PS3 for most tournaments, and the reason is the old fear of 360 RROD, and the now current 360 issues with the console being turned off by hovering your hand too close to the sensor in the front.

Most people practice though on 360, and I've seen plenty of venues using 360's as well. EVO, the biggest fighting tournament of the year, always uses PS3 if I'm not mistaken because they end up being a sponsor?

Well it's that and USB sticks, many players rock PS2 sticks and 360 does not allow you to use any USB stick you want.

It really is a shame sponsor money has to come into play when we're talking about the integrity of the gameplay. I've been bitching about Cap's PS3 ports since Super last year and people thought I was out of my mind.

I can't stand playing either game on PS3. Capcom better step that shit up with SFxTekken.

I might be wrong, but I think the majority of events run Marvel/SF4 on 360s because they're seen as the most stable/arcade perfect versions of the games. It has nothing to do with sticks given most people will have them duel modded. Evo is flat out money hatted.
