it's hard getting this list down to a few....
Sega Rally - desert, forest and mountain, all superlative.. with the wheel this accounts for more than 3/4 of my saturn playtime, easily (used to try get perfect 3 courses in a row, taking turns with my friend)
Waverace 64 - drake lake and port blue (but could have easily been all of them). Port blue is fantastic when you go through the shortcut tunnel .. you can barely see the perfect angle through the turns and when you get it, it's such a rush. drake lake cause of the serenity - nothing teaches you how to use analog (back in the day) than having to weave through those buoys and posts.
fzero gx - god almost all of them again.. personal favs: serial gaps and lateral shift on master, on a screen the size of a wall - this has got to be the most exhilarating racing experience ever.
f-zero - port town, big blue and mute city - its the music that makes it
f zero X - lots again but i liked big blue 2, fire field (gotta love lifting off going down the slope) and port town 2
mario kart - any track (cept last ice course!) - but rainbow road, bowsers castles and mario circuit 2 take the cake for me
mario kart 64 - mario circuit and trying to jump that wall with a mushroom 3 times in a row over and over and over and over again.. so good!
wipeout 2097/XL - all tracks.. but my favs are phenitia park and gare de europa - phantom + piranha of course!
