Anyway, Are there any "paddle" controllers out there (for Tempest) or Trackball type controllers?(Centipede)... or if there are will they even be compatible?

You didn't specify a platform, but if you're talking either PlayStation 2 or X-Box, then I'm afraid you're out of luck here. I suppose if you're a skilled hardware hacker, you could rig a paddle to mimic the X-axis of the left analog stick, select "absolute mode" for the paddle games, and it
should work for playing the paddle games.
Keep in mind that paddle games are ones like
Pong,
Breakout,
Night Driver, and
Warlords, where the knob only rotates a limited amount before it physically stops.
Tempest didn't use a paddle, but a freely rolling knob that could continue spinning without physical stop point (like a mouse or trackball, but with only one axis).
If you have the PC version of this collection (named
Atari: 80 Classic Games in One), then it is possible to get a
patch which adds support for a wonderful little device called
Stelladaptor. The Stelladaptor allows you to connect actual Atari 2600 controllers to your computer's USB port. I use it frequently with my old Atari 2600 paddles to get true paddle control for the paddle games in
Atari: 80 Classic Games in One.
