How does Gargamel know that Smurfs are yummy and delicious?

Unless there was some long lost episode that I must've missed as a child, I've never actually seen Gargamel eat a Smurf, yet he's always going on about Smurfs being tasty. How does he know this? Has there ever been any proof of him eating a Smurf? I remember he made rock stew all the time. Seriously, WTF? How does one eat rock stew? Is it even edible?

And why does Mark Cerny look like Gargamel?

He originally wanted to use them to make gold.

Maybe they thought it was too much of a stereotype? So they decided to make him want to eat them instead...which come to think of it, isn't much better....

He probably ponied up the money for these.

I don't know why; they're not that good.

I thought they were an ingredient in a magic spell?

Yup, that's the canon from the books. And later he mainly wants to "have a revenge".
I'm not sure about the chronology compared to the TV show, but as far as I know the only time Smurf soup is mentioned in the books is when Gargamel convinces the giant who eats all the time (don't know his name in English) to go hunt for the Smurfs because that dish is supposed to be delicious (of course that's a trick, but maybe he fooled himself ? ;) ).

I have never read the books, just watched the old cartoon show when I was a kid. So I am pretty sure that was in the show.

Better question, if he can make smurfs (Smurfette) why not just do that and use them for whatever.

Unless it is revenge.

How does the shredder know what turtle soup is like? And how come all these 80's cartoons had the villain wanting to eat the main characters?

The Smurfette herself is revenge. The original idea was hilarious, the whole plan was that sending a woman to the Smurfs would ruin their life. :D

That giant's name was Bigmouth in the American cartoon.
Why am I retaining such pointless knowledge from my childhood? Clearly I need to do a better job of killing my brain with alcohol.
