It looks like you have the tastes of a 90s Toonami/Adult Swim viewer, which is a good thing because it will make my recommendations easier. These won't all be brand new and there will be a mixture:
Since you like Shonen:
-Jujutsu Kaisen (Current number 1 show and it might spoil you on how good the cinematography is compared to other shows)
-Demon Slayer (A few seasons in, updates yearly with episodes, currently unfinished)
-My Hero Academia (Some seasons in, updates yearly with episodes and recent season was really good after previous season buildup, currently unfinished)
-Bleach Thousand Year Blood War (Only watch if you have seen the original Bleach)
Other recommendations:
-One Punch Man (2 seasons in, will update whenever a good animation studio wants to touch it which means right now it's on hold)
-Mob Psycho 100 (From the creator of One Punch Man, the anime of Mob Psycho is completed)
-Space Dandy (Quirky show, great animation)
-Erased (Interesting premise, good ending)
-Chainsaw Man (Odd show/interesting premise but has a similar style of cinematography as Jujutsu Kaisen because it's the same animation studio)
-Cautious Hero (Really fun concept and great execution)
-Goblin Slayer (Picture Doomguy but in medieval times with a dubbed voice that sounds similar to Master Chief)
-Overlord (Tactical Ruler of a nation)
-Trigun Stampede (Retelling of 90s anime, great art and animation)
-Tokyo Revengers (Gangster/Time Travel anime, the two combined will make sense once you view it)
-Golden Kamuy (Interesting premise)
Western shows based on japanese property with japanese/korean animation:
-Castlevania (Finished show, good story and animation)
-Castlevania Nocturne (Unfinished series, good so far but has room to grow)
Shows where mainly the first season was really good(and arguably that's all):
-Shield Hero (Unique first season about a man who brought into a world where he was wronged and publicly shamed but he didn't give up. You can honestly end the show after one season as that season has a good conclusion).
-Sword Art Online (Unique concept for a first season with high stakes. The first season is great enough to stand on it's own as a full experience)
-Vinland Saga (Really good first season that does wrap up to a certain degree, but while some liked the sudden change in the second season, I did not)
-Grimgar of Fantasy and Ash (There was unfortunately only one season, great watercolor style with a premise of the realistic/harsh reality of living in a fantasy world of orcs and goblins)
If you missed it:
-Cowboy Bebop (Came out during the peak of Adult Swim, you would like it)
-Samurai Champloo (Came out during the peak of Adult Swim, you would like it)
