The trick with graffiti is just taking it slow and try to keep the "gesture" going. You miss on the 50 points bonus by going slowly (or at least, I think that's how you get them) but it's worth it. You still occasionally miss for no apparent reason but I was able to complete them with no mistakes almost every time.
Getting Jet on "Fight or Flight" was tough, oh boy.
