On one hand, seeing all the content they have planned is great. On the other, it just makes me want to wait for the inevitable "complete edition" and play it all in one go.

Hesitating to pick it up in a packed month now. On top that I am currently in a KCD1 playthrough, I might take a break from sim-rpg and wait for DLCs.

Time for Avowed & Monster hunter wild . I don't recall any roadmap on Avowed nor DLCs.

I will play once on release with english VO, and then year or two later do a replay of both games with all the content and with czech VO.
I just hope some of the hardcore mode aspects will get modded in quickly (specifically no map GPS).

You are right. I look into the Avowed early access tax and seems there is no expansion plan for the game like Starfield was.

So why should I buy this now when it will be "complete" by Christmas?

Do I need to play the first game? Can you import save to the new game?

I wonder if your character starts as level 1 or still remembers how to use a sword.

Either way, I think this will be a wait and see. On the plus side, the base game is only $60 and not $70 like so many other games.
