For me, it depends on the context. On a sandwich, I usually go for mayo. On a burger, I want Mayo, Mustard, and Ketchup. But you can't have something like a bratwurst without some good brown mustard.

-Egg Salad - both

-Turkey Sandwich - mayo

-Spam - mustard

Hum maybe. In French, "moutarde de Dijon" is the "creamy" one while the one with seeds is "Moutarde à l'ancienne" ("Old-style mustard")

I like Mayo and deli mustard on my sandwiches. Also Boars head sandwich oil goes a long way too with some cured meats.

On a burger I want Ketchup, Mayo and Mustard, but Pickles are a must too.

The existence of aoli is what makes it a tough choice. Mayo and mustard are both very versatile. They even go together!

The only version of ketchup that is good is either homemade or the "no sugar added" versions you can sometimes find in stores.
