I think in real life the most important thing agains the read option (LJ please!), is discipline, staying home within your lanes, basically.
Unfortunately in Madden, you have to do your own shit sometimes to make sure players play where you want them to.
In the case of Madden it becomes logical to give people specific jobs that can't be overruled by random garbage AI (like the play you call doesn't determine if the DE plays the QB or the halfback), which is why I posted to contain the DE, give him a job.
In Madden you wouldn't want to spy the DE because that will move the DE away from his edge and to the center of the field first (watch putting a DE in spy, his first step is back and toward the middle, not what you want).
Instead, contain the DE on the HB side because then he will step outside first, the QB will probably hand off to the HB, and if not, you've already got the outside edge. Put a fast LB at DE if someone is running the option against you.
Spy the DT because then the blocks in the middle of the field won't immediately engage (I'd spy the DT opposite of the DE).
You could also spread your line and linebackers.

For example when Oregon lost to Auburn in the MNC it was partially because Nick Fairley ate them up in the middle and took away Oregons ability to run there, so the QB kept trying to go outside and the LBers were ready for it.

Sure that would make sense if I was overcommitting outside and was getting eaten up on HB handoffs, but I was still getting beaten outside by the QB.

That's what I did along with blitzing the backside linebacker because he never bothers to disguise it. He broke a few for five or six because somehow Tebow is impossible to tackle one on one but generally it worked well. Honestly next time we play ill probably manually control that DE and stand him up pre snap a couple yards off the line as well.
That said he runs the play as designed, doesn't do idiotic motion and its stoppable. It's also a staple of a lot of offenses now. I don't think it's cheesy in the least.
