Pirates! is, hands down, my top pick. It's relatively new, it's easy to learn, it's got a lot of varied play mechanics, and most importantly it's a ton of fun. I'll list some other picks by genre (Pirates! is a little hard to classify) for first-timers, though, since I've got nothing to do while the dinner's in the oven.
Strategy:
Real-Time: Starcraft - Classic real-time strategy and an excellent starting point in the genre. I'd recommend it over Warcraft III for total nubians. Warcraft III is a great game but it gets a little more complicated with the addition of hero characters. Starcraft is a nice way to learn how to play this style of game.
Turn-Based: Civilization III - In general, I wouldn't recommend this genre for a beginner, but if you get really into PC gaming you're going to want to try it sooner or later and Civ 3 is a great start, if only because Civ 3 games are easy to follow & manage for the first few hours. As with all Turn-Based games, however, it becomes insanely complicated after a while.
RPGs
ActIon: Diablo II is still a really strong choice and is ridiculously easy to learn. World of Warcraft is a great, easy-to-learn game too if you're into the massive thing
Classic: Wizardry 8 - It hasn't aged too gracefully graphics-wise but it's still a ton of fun and easy to get into if you're looking for a game with that old-school, first-person feel that used to be so common among PC role-playing games.
Modern: Icewind Dale lets you use Bioware's famous turn-based D&D adaptation without getting overly complicated...it sort of straddles the line between Diablo and Baldur's Gate. If you really enjoy this, seek out Baldur's Gate 1 & 2, but this is a better starting point for beginners.
Action
Single-Player - Half-Life 2 is a fantastic choice. It isn't that hard of the game but it's got a great story, gorgeous graphics and is a lot of fun. If you don't have the computer to run it the first Half-Life is still a great choice, and has two alternative campaigns you can pick up to extend the life a little.
Multi-Player - Unreal Tournament 2004 - honestly I don't really play this kind of game online but I have a friend who swears by this game. Don't know how good it would be for a nubian.
Adventure and Puzzle
Syberia: This was a cool little adventure game from a couple years ago. Very well-designed, beautiful game. It's 100% puzzle solving and exploration, so if you don't like that, pass.
Return of the Incredible Machine: Contraptions - This is an old, old puzzle game but one of the best games that really highlights the sorts of things consoles could never get away with. You basically had a big toolbox of different gadgets you had to put together to solve a "maze"-type puzzle (think of the breakfast-making machine at the beginning of Back to the Future).
