After watching the video, some cool things I noticed:
-Destructible environments! Probably only select types, like sand, but still. I think the tree blew up as well
-Maxwell seems to be able to do certain things even if he lacks the tools. He lit the dynamite without the need of fire, for example
-That level with the cop/fireman/etc. is actually 1-1. No wonder it looks so simple, haha.
-Train can run without rails
-"Triggers" during levels will probably be what makes later levels so difficult. Things like the starite dropping down a level when you get too close.

On a more serious note, a guy in my office just got little big planet, and it made me wonder again how many simple physics effects will be available -- pullies, catapaults, ropes, weights, and wheels.

And that's going to happen with most interactions, I suspect. Items will be of a fixed size, and physics may be very restricted going by what you say.
