Somewhat Complete List of Game Remakes (WIP)

Nope, these are all ports of the WSC remakes with added cinemas.
Front Mission was just ported to WSC, not remade at all. The PSOne version is where it received all of the new content & the slightly tweaked game engine.

Again, based off the WSC remakes... though these are actually more different than the PSone versions, using somewhat different battle sprites, new music, tweaked mechanics, new script, etc.
Well, I'd say if the Origins titles are simply ports of the WSC versions, Dawn of Souls is closer to an entirely new remake than anything.

As you said, sprites, music, scripts, etc were redone/enhanced. But on top of that, the entire balancing of FFI has been readjusted, and there is also the new MP system, dozens of new items, 4 bonus dungeons, etc. I was honestly quite surprised (and a bit disappointed) to find out that it played quite different from any other version beforehand. As for Final Fantasy II, it apparently received balancing changes as well (I've heard it's playable now!), and the addition of the new epilogue. I haven't played it myself yet, but if it's had as extensive an overhaul as FFI, it should definitely count IMO. :)

Half Life: Source is not a remake by any stretch of the imagination. It literally is the same exact game, same textures/modesl/sounds, but a port to the Source engine so it has pretty water and some physics.

Really? Nice that Division 6 put some more worj into it than just cinemas. I wish they'd do a GBA port so we might actually see a US release of FM1. I'm still a little surprised that rumored Front Mission History US release never surfaced (it was to be FM1+2 iirc).

Ok so I see the pattern we're forming here. A remake can only be considered a remake if it's a literal rewrite of the game code or most of it, right?

If that's the case then almost all that was posted is still just a port with extras. I don't mind I'm just trying to clear up any confusion we have since the rules of what is a port and isn't in this thread is very vague.
