Sony usually at least archive the conferences on twitch, and I can 99% of the time find them on youtube as well, and you maybe able to find an archive through one of the official blogs. Most of the media also normally upload a copy somewhere.

The ones on XBO are only the biggest IPs with some western appeal, and they were also started and announced before it became apparent where it was going to end up compared to the PS4.

It's more like SE doesn't see the point of releasing JRPGs on Xbox One due to the terrible sales of Type-0 HD. I think Nier was the last non-FF JRPG from SE to be released for the Xbox 360.

PS3/PS4/Vita actually. The latter is mostly on the Japanese games whereas the former is on Western/FFKH games, but even so FFXV and KH3 were announced for Xbox One before its release, hence the uncertainty and going for it anyway.
