I can confirm there is no way to play off-tv as of yet. Managed to get into a game and there was no way to switch displays. Gamepad screen doesnt seem that essential so they wouldn't enable off-tv... Hope this is just for the demo/stress test and it will be enabled for multiplayer once the full game hits.

Bummer, I don't have a t so wont be able to play the stress demo.

If you're using non-gyro, yeah, you need to mess with the camera sensitivity and I'm not sure there's enough time to do that in this testfire stuff.
