Ultimately as a Big Corp(tm) they will be fine. I know people who worked there, they all got laid off - officially ZOS said they didn't lay off developers in their press release, 'just' customer service etc - but in reality they laid off developers, graphics people etc etc. You can watch the numbers drop yourself by watching their LinkedIn page:

From a gamer point of view, ZOS and the game will survive. How? If the console release doesn't sell, they could go free to play and sell more in crown store. Star Wars Online proved this is profitable. However, ZOS don't want to do this because ultimately they had a huge cash injection by venture capital funds back in 2007 with the goal of becoming the next Blizzard, the next premium MMO company. They don't want to be a free to play developer really - these people have corporate overlords who own Elder Scrolls and Fallout, two of gamings biggest multi-billion dollar franchises.
Worth noting Skyrim sold ~30m copies on console -- it was absolutely HUGE -- so you can bet where all development focus is right now. And rightly so.
