So yes, as the title says, what are some worlds/levels in video games that are based on theme parks? One that comes to mind is Banjo-Tooie's Witchyworld, one of my favorite worlds in the whole series.
Over the years, Banjo-Tooie's gotten lots of flak over how supposedly larger, complex and "tedious" its level design generally is, especially in comparison to its simpler predecessor, Banjo-Kazooie. I sorta understand that viewpoint, even as a fan of the game myself, but I think Witchyworld is a strong level, both in terms of level design and themeing.
Witchyworld is generally a poorly managed and run down theme park with broken down and dangerous attractions. It is essentially a hub with three distinct areas, similar to something like Disneyland. It's big but it's also pretty simple so you'll rarely get lost here, unlike say Grunty Industries. As for the "lands" within this world, there's a western themed zone, a horror themed zone, and a science-fiction area, each with their own set of mini-games and various challenges.
