My vote for most quotable movie of all time is Predator.

Close second is Silence of the Lambs.

For people around my age (20) it has to be Mean Girls. I didn't watch that until a few years ago, but I noticed a ridiculous amount of the script had seeped into even my vocabulary despite never seeing it before.

Probably Princess Bride after that.

It's absolutely this. It covers literally every situation that ever comes up in life. For example, someone's phone is ringing:
Phone's ringing dude!

Or someone has expressed an opinion you disagree with:
Yeah, well, you know, that's just, like, your opinion, man.

Or someone has stumbled across an unknown person while hiking across Switzerland:
This is what happens when you find a stranger in the Alps!

Literally every situation can be covered with a Big Lebowski quote.

Not sure in general but I do remember two distinct times in my life a movie dominated pop culture with quotes and impressions, one was Austin Powers and the other Borat to a lot of people's annoyance.

For me and my brother in particular it would be Toxic Avenger we still quote that to each other now.
