I loved that fight because the first couple of times I thought "this is bullshit, not sure I'll be able to take this guy any time soon. he's just too tough when he hulks up" and then I got my rolls down better and did it. Mastered that fight and what I learned there helped my timing in other spots.
I still love him. Kind of a twisted love-hate thing. Sad that his armor is belly-free tho ._. looks so stupid.

I'm not sure about the answer to your first question, though I think it's not permanent. But as far as the achievement is concerned, you don't have to actually join the covenant for it. They all unlock when you get to the "Join? Yes/No" popup.

So...dual wielding tips? I just tried entering power stance and didn't realize you couldn't block while dual wielding, and I'm so used to having my block up when I'm not attacking...

Use it with Mask of Judgement and dual wielding Caestus. You are now Batman.
Gotta start mastering roll-dodging if you want to dual-wield in most encounters. Stat-wise, focus on Endurance and Adaptability.
You can parry while dual-wielding in one of two ways: 1) certain weapons have an L2 attack which will parry, like the Falchion; or 2) you can go 2H with one of the weapons and parry then. When you're in the powerstance specifically however, you can't parry or block till returning to a normal dual-wielding stance. That stance is all about attacking and moving.
Generally-speaking, if you want to focus on dual-wielding you should heavily concentrate on mobility - both stat-wise and skill-wise - because what you gain in attacking power you also lose in defensive potential.
Why do people keep suggesting ADP? All it does is:
1. Affects flask use speed (need a lot of points before it's noticeable)
2. Slightly affects movement speed by mitigating encumberance somewhat
3. Raises poise as long as it's equal to Endurance (and you need a TON of poise to not get interrupted in this game, unlike the previous)
It does not:
1. Affect dodging in any way.
It's basically as shitty as Resistance was in the previous game.
I mean the ground pound. If he hits you with the jump attack you get impaled to the ground. you don't have enough time to escape the explosion afterwards. That is the ONLY reason I ever died to him. Stupid camera sometimes makes it nigh impossible to see him for proper timing for the dodge, in particular close to a wall.

It clearly seems to have an effect on recovery time after roll-dodging. I first started the game with a Swordsman who only has a stat of 6 in ADP, and roll-dodging was just obnoxious, especially as I'd just gone through the first Dark Souls again on PC right before release. After several points into Agility it started to resemble what it was in the previous games. I can't imagine how that is placebo; the difference was blatant.
I'll test out with a soul vessel respec, but I'd be really surprised if the difference is non-existent.

More health would be better than a single point into ADP.

To me, adaptability seems to grant additional invincibility frames when dodging--making you dramatically less likely to hit when rolling.
It's not even ADP per se, it's the agility component. Casters get to raise agility through ATT. My casters always sit at around 93 agility, and they dodge just as shitty at end game as they did at the start. ADP raises agility faster, but I'm sitting at 40 ATT. You'd need to go at least 30 into ADP to see a similar, if not slightly higher gain in agility.

It would be a shame if it is in fact another dump stat. It may also screw up the PvP community for a bit since a lot of people are leveling to ~150 due to raising ADP.
