I hate to sound like a scrub, but having never played a souls game before whats an easy class to get in to?
Okay, so unlike the other two Souls games [EDIT: Actually, now that I think about it, I can't remember if every class started with a shield in Demon's, but they definitely all did in Dark Souls1]
where every class starts with a shield (even if some weren't very good shields), Knight is the only class that starts with one in Dark Souls 2. Thankfully, you can get a serviceable shield just a few minutes out of the tutorial for free with some exploration.
Any way, I don't really know how to answer "what's an easy class to get into" because essentially, unless you already know what you're doing in the combat, every class is going to feel equally weak at the start, in my opinion.
So I'll just leave a couple general tips:
1. Until you're used to how combat flows in this game, use a shield, even if you don't want to. Very few shields in the game block 100% of physical damage, but any sort of damage reduction is better than eating a hit at the start when you're unsure what you're doing.
2. During character creation, the game will ask you to pick a "Gift" besides picking your starting class. If you're just starting out I'd say pick Healing Wares. You get a ton of extra healing items to begin with.
3. You may or may not already know, but picking your class in a souls game is nothing more than picking your starting load-out, really, unless you're aiming to stay under a specific level for the purpose of pvp/co-op while still min-maxing the stats that you want.
So you could start as a Cleric and, only a couple hours or so in, be using the same kind of equipment a Knight or Swordsman would be using from the start. Or vice versa.
