The first season of The Melancholy of Haruhi Suzumiya is surprisingly mature and has some good emotional moments, as well as being a more toned down introduction to character types that scare people away from anime.

Fate/Zero - Top-tier anime and one of the rare ones with absolutely no fanservice, meaning no screens of getting a female character naked or in underclothing for sexual gratfication and/or humor.

Madoka Magika - Another top-tier anime which prided for its dark themes and taking the stereotypical magical girl genre and flipping it over its head; breaking it down and rebuilding it.

Both of these are fantastic, Madoka might be a little hard to get into if you're just starting out, though.

Also, Hajime no Ippo.

I still wonder how Death Note, Sword Art Online and now Titan got the mainstream-appeal they got.

I mean so many people not really into anime/manga kinda digged those anime.

Seeing this thread makes me wonder, if the people in the Community threads just have a bad taste. A lot of the things you see there are the typical ecchi/uguu~ kawaii~ anime.
While I liked Air TV and Clannad... I don't think I could recommend those to someone interested in getting into anime, particularly if they start with action anime. That said, there is a lack of those kinds of anime in my list because he should start with some real variety first.

Code Geass

Death Note

Fullmetal Alchemist Brotherhood

Neon Genesis Evangelion

Hellsing Ultimate

Cowboy Behop

Those are the best.

NOPE, FUCKING DEATH NOTE.

There is nothing good about that show, nothing.

It is the single worst anime I have ever seen in my life, and the rabid fanbase it has baffles my mind.

Other shows I'd add:

Samurai Champloo

Space Dandy

Durarara!!

Great Teacher Onizuka

Trigun

Afro Samurai and Afro Samurai Resurrection

Ghost In The Shell

Lupin The 3rd and the A Woman Named Fujiko Mine series

Bleach is really long and there is a lot of filler but the arcs are pretty great

Berserk

Akira

Black Lagoon

JoJo's Bizarre Adventure

Yu Yu Hakusho

The Big O

There's probably countless amounts you could watch.

I'm not a huge anime watcher but here's some stuff:

-Cowboy Bebop
-Samurai Champloo
-Welcome to the NHK
-Death Note
-Blue Submarine No. 6
-Howl's Moving Castle
-Spirited Away
-Mushi-Shi
-Full Metal Alchemist
-Afro Samurai
-Ghost In the Shell
-Gundam Wing(the dubbing was pretty bad though)

While I enjoy major, and enjoy the fact that there actually exists another person that has seen it I can not remotely understand why you would recommend it to someone who is looking for newer, short, high budget, mature anime.... as it's not remotely any of those (while it touches on some more serious issues later, at no point would I call it mature... I'd be stretching it to call it teen). One outs fits that a lot better, but in that case there is a good chance the OP won't want to watch stuff in japanese as their second show... I mean it's not like attack on titan is the only good anime to ever be dubbed.

I just wanted to initiate another Major fan =(

One Outs is still good.

My recommendations:
Space Dandy
Mushishi
Jojo Bizarre Adventure
Gantz
Ghost Stories
Gurren Lagann
Hajime No Ippo
Hunter X Hunter
FMA Brotherhood

Naoki Urasawa's Monster. One of the best animes I have ever watched. Such a great story(murder, conspiracy, human expermination, revenge) and I love the style of the animation. I can't recommend this enough. WATCH IT!!!

Also watch Detective Conan/Case closed. I know you said no super long animes but how can I not recommend my most favorite. lol

Samurai Champloo

Full Metal Alchemist, then Full Metal Alchemist Brotherhood

Death Note

Hunter X Hunter (new version)

Fair enough, but that is usually best saved for when someone discovers the "sports anime" genre. While I really enjoy major I still tend to recommend one outs (I think I might like this one more... I mean it's basically if you cross death note with baseball anime lol) and cross game (overall I like this one less then major) as they both have far less episodes to them and are more consistent overall (the low points in major get pretty darn low.. luckily they tend not to last that long)

In general I am noticing a lot of people seemingly just recommending shows they enjoy instead of reading the original post and seeing the limitations that were set, and not thinking about what are good gateway anime away from attack on titan and into other stuff..... I mean the OP might one day enjoy something like K-on (I personally hope not, but everyone is free to enjoy what they want :P) but you don't go from attack on titan to k-on... you do something more like Attack on titan to Full Metal Alchemist to Haruhi Suzumiya to then maybe k-on (I would likely add another gateway or two, but I can't think of something in between haruhi and k-on.... plus my end point would likely be something more like Ouran High School Host club instead :P)

If you're trying to exclude older anime OP, you're doing yourself more harm than good.

The three I would recommend are Berserk, Ghost in the Shell, and Full Metal Alchemist Brotherhood. They're not only amazing, but mature, so you're not dealing with something childish.

Watch Neon Genesis Evangelion as soon as you can. It's the best the medium has to offer.

What

OP, when you say no anime at all, do you count Ghibli films? If so, definitely start on that. My first and favorite is princess Momonoke, but you can start with any.

For shows, Cowboy bebop and Samurai champloo stand out so watch those. Thankfully those have been mentioned a lot already. Another one I'd recommend is Bacanno. It's a fairly whimsical and yet compelling anime about mafia members and thieves getting immortality set in the US during the 30s. Its only around 13 episodes I think so its a short watch.

Ghost in the Shell (first movie, not its sequels)
Anything Miyazaki
Legend of Korra Season 1 (Not truely Anime, but it shares its art style)
Akira
Patlabor
Girl Who Lept Through Time
Shingeki no Kyojin

Holy shit I did not expect this kind of response to this thread.

Seems like the most commonly recommended ones are

Cowboy Bebop
Samurai Champloo
Death Note
Full Metal Alchemist / Brotherhood
Berserk
Trigun
Ghost in the Shell
Shigurui: Death Frenzy didn't get that many nods but I like the concept.

Seems like a solid start. Gonna have my work cut out for me watching all these.

So, did you watch Attack on Titan in dub?

Because I know like 90% of the voice actors in that series. I have a few of them in my phone right now. But yeah, what did you think of that dub?

I did watch Attack on Titan in dub. I mean I don't have anything to compare it to but I thought they did a great job. Good enough to get me into anime. You can send them my props.

Monster

FLCL

Planetes

Texhnolyze (You want mature themes? You got it with this one, and then some)

Kaiba (don't be fooled by the art style, definitely a mature show)

Berserk TV show (The manga is much better, but the show is good regardless. The twist that occurs in this series is probably my favorite of any I've encountered, period.)

Cowboy Bebop

Legend of Galactic Heroes (Have not seen this one myself but it's supposedly incredible with a story that truly does deserve to be called, "epic.")

Samurai Champloo

The Big O (this show is criminally underrated and deserved another season)

Eve no Jikan (I only watched the original batch of 6 episodes and didn't watch the movie. It's about robots that now possess true AI living with humans and vice versa, from what I remember.)

Neon Genesis Evangelion (A good but not incredible show that has some crazy/bizarre parts and I don't just mean the plot or characters, but how some things change between remakes/rebuilds etc. Anno is known as a bit of a "troll" when it comes to how he's done the movies and remakes. Although I haven't seen ANY of the "Rebuild" movies myself.)

Revolutionary Girl Utena (This is the one that probably seems most.....inappropriate for your tastes based on name alone, but it's a surprisingly mature and dark show made by the Sailor Moon creator. The intent for the creator was to make a more "mature" show and succeeded imo. The way it progresses is very unexpected in regards to the plot and themes. It touches on homosexuality, incest and gender roles in some subtle and other not so subtle ways. It's one of the few shows I watched and then read Wikis on to make sure I understood every piece of symbolism and subtlety in the plot I may have missed. I did not watch the movie, just the TV show.

This should be a good basis for you, personally I HIGHLY recommend reading Berserk. The artwork progresses incredibly well in quality and the detail is bordering on unmatched. The length in between releases is maddening though and it somewhat artificially makes the pacing look ten times slower than it really is. Have fun!

I Keep Editing this post so yknow, read it over

You should watch the entire creative output of these directors
Hayao Miyazaki (Nausicaa of the valley of the wind, Princess Mononoke, etc)
Satoshi Kon (Paprika, Tokyo Godfathers, Millennium Actress, etc)
Makoto Shinkai (5cm Per Second, Children who chase lost voices, the place promised in our early days, etc)
Mamoru Hosoda (The Girl Who Leapt Through Time, Summer Wars, etc)

Also feel free to check out the work of these guys.
Mamoru Oshii (Ghost in The Shell and Jin-Roh the wolf brigade in particular)
****Oshii wrote but did not direct Jin-Roh, I know this.
Katsuhiro Otomo (Akira in particular)

Individual Film Reccomendations
The Wings of Honneamise
Grave of the Fireflies
Tekkonkinkreet
Vampire Hunter D: Bloodlust

Then we get into series, in no particular order except for the part where Cowboy Bebop is first and always will be.

Cowboy Bebop
Samurai Champloo
Kids on the Slope
Neon Genesis Evangelion
Planetes
Paranoia Agent
FLCL
Trigun
Time of Eve
Welcome to the NHK
Gundam 08th MS Team
Gundam Wing
Mushishi
Ergo Proxy
Berserk
Serial Experiments Lain
Michiko and Hatchin
Rurouni Kenshin
Escaflowne

Love Hina
Azumanga Daioh
Toradora >_>
Golden Boy

Shit !! I forgot about Fate/Zero. OP wants all action all the time, that's where you gotta go. And it's all on Netflix sub/dub.

Madoka is also on Netflix and a must watch. But a tad impenetrable for a second or third Anime ever watched ever.

Watch Neon Genesis Evangelion as soon as you can. It's the best the medium has to offer.
What?
-blink-
It's more important than good. Not saying I don't think it's good. Hell, I'd tell OP to watch the Eva Movies immediately but the series comes first.

Madoka only matters if you know or care about magical girl shows IMOTBH.

Death Note
Same Director as Attack on Titan. Dark, thrilling, over the top and fun. Don't listen to people that say the show dies half way through, if anything it gets more interesting, on top of having one of the best finales I've ever seen.

The must-watch shows have already been recommended, you lucky son-of-a-bitch. I'm jealous of you, getting to watch all these great shows for the first time. I still remember the first time I saw the likes of Full Metal Alchemist, Cowboy Bebop, Bubblegum Crisis Tokyo....You're in for a treat.

It mostly plays off of existing magical girl genre expectations. So I don't think I can argue with that. But it's still at least an Anime with a good story and unique (basically SHAFT) artstyle. I forgot, is OP allergic to fanservice?

a fair warning bebop and champloo (especially champloo) are overarching story challenged, the vast majority of the episodes are just flavor of the week episodes that in the grand scheme of things don't matter at all... that doesn't mean they are bad shows, they are both solid shows, just something to keep in mind. (the bebop movie is worth watching though, so if you finish the series and want more it's a fun watch... in general most anime movies based of tv series aren't worth watching as they are either recaps, or poorly done retellings)

As for trigun..... try to watch it all the way through.... the first half is vastly different from the second (they are basically different shows) if you end up enjoying it though gungrave is a decent show to pick up after it though, as it's from the creator of trigun, but it's much more serious and darker in general.

the rest really don't need disclaimers :P

I'm going to echo Fullmetal Alchemist Brotherhood.

Interestingly enough, my roommate never watched anime before either (not even DBZ), and he really got into Attack on Titan. It's pretty damn great.

What's really important is how he feels about gratuitous head tilting.

Probably in this order of viewing:

Death Note
Spice and Wolf
Break Blade
Hunter X Hunter
The entire Gundam series, I highly recommend starting with Gundam Unicorn and then Gundam Build Fighters to start with. And then backtracking from there.
Fullmetal Alchemist
Fullmetal Panic (Mostly for the fumoffu season)
Code Geass (Can't say you're an anime fan until you witness this trainwreck)
Gintama (Watch this last, need some appreciation of Japanese culture first, but also my favorite anime ever.)

Likely a lot I'm missing, but this is a great way to start IMO.
