1. I really like Cowboy Bebop, Neon Genesis Evangelion, and Bleach. My top 3, and three of the most popular ever.
2. Inuyasha is really cool, as is the original Dragonball.
3. Akira and Ghost in the Shell are must-watch anime films.GO WATCH THEM.
4. I've been meaning to check out Yu Yu Hakusho eventually too. I've heard great things.
5. Check out some old Speed Racer episodes online. They're fun too.

There is nothing good about that show, nothing.

It is the single worst anime I have ever seen in my life, and the rabid fanbase it has baffles my mind.

since a number of people are recommending gintama I feel I should ask... when does it actually get any good?
I've chugged my way through the first 20 episodes and really found nothing redeeming about the series.... it had one of the worst first episodes in the history of shonen anime... (how do we make a splashy start.... I know... lets put what should logically be placed well after episode 10 as the first episode so it has more stuff going on then character introductions... and then just pretend it didn't happen when we hit episode 2)

I think it's trying to be a comedy through the first 20 episodes but in general it's not funny.

I was expecting it to get a plot at some point... but beyond character introductions it did nothing in regards to an overall plot.... I mean the stories and characters aren't horrible... but really aren't any better then generic shonen anime number 2772.

given how much it's praised I feel there has to be something redeeming somewhere (thus I am eventually going to read the manga) but when... I mean it does get arcs at some point right... it can't be 300 episodes of random crap each week right @_@
 
I haven't been into anime for years (last anime I watched was Berserk about 9 years ago), but that thread yesterday with shots from Miyazaki films kind of re-sparked an interest. I wish some of his films were on netflix...
 
For the love of god watch Gurren Lagann, JoJo's Bizarre Adventure, Akira, Ghost in the Shell, Cowboy Bebop, and Samurai Champloo.

My recommendations, bold for GO GET IT NOW STUPID!.

Movies:
Summer Wars - Amazing movie that is not what it sounds like. The title and cover art make it seem like typical anime nonsense but it is actually a very heart warming/realistic tale about family. Highly recommend it.
Wolf Childen - Blew up the Japanese box office, once again about family.
Ghost in the Shell - Possibly the best/first/easily most prominent Japanese cyber-punk movie made with a great cast and premise of near future crimes, cyborgs, and occiasional police brutality by a female lead who would make Bayonetta nervous.(did not like the sequel but... if you get into the franchise its worth checking out)
Studio Ghibli's (Everyone has their favorites, mine is Kiki's Delivery Service not afraid to admit it)

Gundam Unicorn - its 7 one hour movies/OVA. Very well paced, thought out, and animation second to none. Downsides: title, people scoff without checking it out. Biggest downside, it takes place in the Original Gundam universe meaning if you have not seen the OG shows Mobile Suit Gundam, Z Gundam, ZZ Gundam, and some of the side stuff (or at least watched the recap movies/a wiki page) you will be lost with all the references they are making. Still enjoyable because as I said its well made, but some of the twists, references, and character appearances are all the sweeter if you can "I get that refrence.gif" I rate it as one of the best series made ever personally, but I also know the previous plot lines.

TV:
Gundam 00 - Gundam is a huge franchise and some of the series are related, some are self contained. This is the later. One of the first (if not the first) anime to be broadcast in HD, also has the usual fairly high production budget that Gundam carries with it for something that extends to around 50 episode total (2 seasons). There is no extra knowlege needed to enjoy it, good plot twists, good pacing, great fights, and best of all has very few "ANIME~" moments, the ones that exist are used to break up the tension in an otherwise serious plot. Also skip the movie.... the action was great but it... yeah. A case of "some things are better implied than shown."

Gundam 08th MS Team - Highly recommend this one. Great animation, cast, and is very grounded in the struggles of normal soldiers during the main Gundam Universe's war. No super powered robots, or pilots with damn near psychic abilities, just normal men and women in the trenches. The romance plot is a bit... eh imo but the rest brushes it aside.

Cowboy Bebop - Not much to say, just watch it! oozes personality and character. Very subtile compared to most anime now a days, a true classic of the great late 90's anime era.

Samurai Champloo - Great animation and the music is to die for. If you like rap/beats this is the king. If not, you might not be swayed. The music is almost a character in itself of this show.

Kinda recommend but might not like it:
Sword Art Online - It starts off great, very awesome. Finally a show that addressed the fact that people can have meaningful interactions through online games. Sadly for me, the show committed the ultimate anime sin around episode 15 and completely lost my praise. Out of nowhere we get

Evangelion - Love this series but it might be too much for the OP. It leaves tons of questions for the person watching to come to their own conclusions. Total mind fuck moments, others of amazing fights. The recently released movies are some awesome animation but it really is one of those shows with tons of plot devices but open conclusions. One of those shows people enjoy without knowing what the fuck just happened totally.

Eureka Seven - Coming of age story with a cool cast and setting. Always nice when the main character actually grows up in many ways in the show. Its a bit long though and the studio/director kind of retconned ideas with the movies and sequel anime Eureka Seven AO. I personally love it, some hate it. Oh and its filled with surfing/hippie culture references so if thats your thing, go for it.

Gurren Lagan/Kill la Kill: aka the craziest seeming shows made. Both are coming of age stories as well. Guren about boys, Kill la Kill about girls. Fantastic animation, characters and sound tracks. Be warned though, these are the "batshit insane" shows simply because once they start doing insane stuff, they just fly off like a rocket with it. Very enjoyable to watch visually and some fun jokes, in each while making some very serious points about...well honestly being a person.

FLCL: Watch it in English. Its well translated as in many of the Japanese references that people may not get were changed to something people will understand. Its only 6 episodes, but they are great episode. The first time you watch it might be one of those "wtf... was the point of that", it just means you need to see it again. Once the point clicks in your brain its a "OHHHHHHHHHH I get it!" moments. Moves at a fast breakneck pace but its a fun show.

I've been slowly working my way through JoJo, I'm about 10 or so episodes in but I'm kinda foggy on it since I always seem to watch it when I am really tired from work. xD

I started watching it because of the mentions on GAF, and other people over the years, and Two Best Friends.

Also, for every single person who says to watch the first FMA series over Brotherhood...you are crazy! Brotherhood is a million times better, and that's coming from someone who saw the original series + the conqueror of shambala first. The newer series is way better and truer to the manga.
 
I've been wanting to check out Neon Genesis Evangelion for a while now. Is there any place to pick up the collection without breaking the bank? Same goes for Berserk. All these out of print animes are selling at rediculous prices.....

I also didn't see any mentions of Fooly Cooly(FLCL), which is a crazy show and it's only 6 episodes long.

But again, it's fantastic for the characters and the animation itself which was done by Gainax.

there really isn't much all that special about it at this point. At the time it came out it was decently unique and had more depth then your average anime. Since then it's had elements taken from it and done far better, with better characters, and better production values. It deserves to be remembered for what it did to the anime industry, but at least to me it hasn't held up well at all, especially when it comes to the points where they ran out of money making it.

I do need to watch the new movies though... as I've heard they fixed one of my biggest issues with Eva.... the characters. In the original series the main characters are very very shallowly designed. Most have two settings... the one we see when we meet them, and the one they turn into after some event later in the series... without really anything in between... they are just poorly designed characters, molded with a very certain traits to forcibly make the story work. I've heard the movies do a much better job of making them feel like actual characters instead of robots programmed with very specific traits and give them a lot more depth... I am just waiting for all of the movies to come out before I watch them.

obviously people have vastly different feelings when it comes to EVA though :P (such as PaulExcellent a few posts below this... you would think we are talking about different shows... but alas the only decent characters in eva are Pen Pen and Misato and in general they are pretty pointless lol... yes you heard me the penquin is a better character then gendou/rei/shinji/asuka)

OK. Evangelion is an anime based around an annoying-ass teen with a FUCKTON of issues that pilots a giant robot created by NERV, an organisation made to protect Tokyo-3 from these crazy fucking shapes called Angels. The world has been sent to shit due to an event called Second Impact, where scientists were fucking around with something and shit blew up half of the planet. There's SO MUCH MORE to it, but that should set the plit for a bit.

Now, the "main" characters. You first got Shinji, the troubled teen that no one loves. Not even himself. Then you have Rei, a strange girl that also pilots a giant robot. She's an introvert with lack of people skills raised to the max. Finally you have Asuka, a 'tsundere' with a superiority complex as large as the sun.

So, what makes this series so loved and what not? Well, you kinda have to watch it to answer that question. lol It's rather hard to describe due to the possible spoilers, so I'll give you some of the reasons I like it so much:

The fact that all characters are developed and each of them have flaws that make them unique and make them feel more human. These people are all messed up in ways you can't imagine.
A setting where right and wrong is not necessarily the answer. What matters is destroying the Angels. That's the only objective. What may happen while doing this does not matter. This gives different perspectives into the world these characters are in and how they grow as the show goes on.
Everything matters. Excluding two episodes or so, the world of Evangelion is influenced by every single piece of information provided. What might seem unimportant to note at the moment might be foreshadowing to a future plot point. It's all subtle and what not, but it's there.

I recommend watching a few episodes to get a sense of what the show is all about. And yes, the main character is super UGH, but that's something to note as the show goes on. The thing is, as one poster already typed above, the show is dated and other series have "improved" on the EVA formula. Still, it is a classic that deserves a watch for sure.
Also giant robots doing crazy shit.

I've been talking bout this show more then I should be as of late lol, but black lagoon would work well if you want a mature style show with action. Cowboy Bebop is the other that would work for you.
 
I'm a causal anime viewer and all all have been mentioned before but my favorites are:
Death Note
Rurouni Kenshin
Ghost in the Shell: Stand Alone Complex
Fullmetal Alchemist Brotherhood
Cowboy Bebop

Fullmetal Alchemist and Rurouni Kenshin are the easiest to step into. Death Note and Ghost in the Shell are a bit more serious and more mentally taxing at times. Cowboy Bebop is in my opinion the best anime ever and should be watched as soon as possible. Hope this helps!

lol It's kinda hard to explain in short but I never thought NGE was really about mechs
not only because they are giant engineered bio-mechanical humans containing the souls of the pilots moms
it's more exploring teens minds, puberty, different characters psychological struggles etc. etc.

Personally I really just loved the whole overarching apocalyptic feel and premise. Really nails that better then just about any other media I have seen. Strange beings trying to get to a city deep underground, finding out what they are attacking for, how the world got to that point, how they developed the eva program. The Angels feel like an actual huge threat that you wonder how in the heck Nerv even with their crazy powerful weapons and virtually impenetrable underground fortress are going to be able to survive.

Doesn't hurt it's got some great action, intrigue, animation that still holds up 20 years later and all that.
 
Go with old animes first. Start with Full Metal Panic. :D

I'm a jaded anime watcher and I tend to only watch adult themed shows now a days, so I feel my tastes are pretty similar to yours OP. I have a million suggestions, but these are the ones that I'm pretty confident most people will like.

for the anime fans in this thread, you should keep an eye out for Terror in Resonance next month as it has Yoko Kanno and Shinichir&#333; Watanabe coming back together (watanabe directed bebop, and kids on the slope while yoko did the music for them... I am not sure if they did more projects together but both have done a ton of amazing work in general)
 
Bebop was okay I guess, but I liked Samurai Champloo more. Definitely recommend Champloo.
Seeing quite a few Berserk recommendations, and I'm afraid I can't echo them. The ending of that anime is the biggest WTF cliffhanger ever, and if you're not willing to check out the manga afterwards I honestly can't say it's worth it. I mean the anime's good stuff, but you're not getting a remotely complete story from it.

What's the deal with Ghost in the Shell? I see there are two TV seasons as well as some movies. What's generally recommended when it comes to that series?
 
By the way, you should also try "Baki the Grappler", "Zetman" and "Akumetsu." I believe the manga is much better for all of those series, though.

Edit: Another vote for JoJo's Bizarre Adventure.
